Working with Maestro Mezcalero Luis Arellanes and Adiel Celis, we maintain every step of this ancestral process, from harvest to distillation, exactly as it has been done for generations.These methods aren’t just tradition – they’re the soul of authentic mezcal.

The Path To Excellence
Each batch begins in the wild, where agave plants mature for an average of 12 to 15 years. Our maestro mezcaleros select only the finest piñas, reading the land like a story written in soil and stone.
The hearts are roasted in earthen pits, crushed by hand with Encino mallets, naturally fermented, and double-distilled in copper stills or in buried clay pots. Every step requires patience, precision, and profound respect for tradition.
